HaPpY bIrThDaY to me

It was an uneventful bday, as they tend to be as the years progress.  Better than bein' dead - see, I DO look on the bright side sometimes.  I don't feel that old, but I don't feel that young either.  And I think that's "it"...you really are only as old as you feel.  So, somedays I'm quite a bit older than others!  And after large intakes of Tequila......
Me - hangin' with the 20 somethings...they are the ones who don't look constipated.  The very attractive one on the right would be my sister.  Hope she doesn't get pissed mind I posted her pic.

My husband has given me a 90 minute hot stone massage at a local spa - how do I love thee, let me count the ways!  I'm pretty syked, I do LOVE a hot stone massage.  I'll be enjoying that today!  My kids made me lots of "homemade" presents....and i made myself a homemade chocolate cobbler
I had never heard of a chocolate cobbler until I read How Sweet's blog...and between the pics and her description, I knew I had to give it a try, plus, I had all the ingredients on hand.  I have to say it was pretty delicious.
Eating it warm with some vanilla (Edy's Slow-Churned Vanilla Bean) ice cream seriously ups the yumminess factor.
I'm really thinking about having some for breakfast, then I could let everyone know how it is cold as well.  I'm considerate like that.

It was a hit with the chillins' too.  Kind of a scary pic...Number One (on right), will be pissed if she finds out I posted this!  Mom's revenge for all obnoxious tween behavior.

Chocolate Cobbler - (links above)
1 cup flour
1/2 t. salt
1 1/2 t. baking powder
1/2 cup sugar
2 T. plus 1/4 cup cocoa powder
1/2 cup milk
3 T. vegetable canola oil
1 cup packed brown sugar (yep, a whole cup!)
1 3/4 cups hot water (I know, weird right?!)

Preheat oven to 350.  In a bowl (duh), combine flour, salt, baking powder, sugar and 2 T. cocoa.  Stir in milk and oil.  Pour into baking dish - How Sweet used an 8 inch oval.
I'm not sure what size I used, but somewhere in there. I should have used a bigger one, then the "cake" portion would have been thinner, with more "fudgy" ribbons throughout. Are you salivating yet?!

Combine the brown sugar and remaining cocoa and sprinkle over batter.  Pour hot water over top (DO NOT STIR).  Bake for 40-45 minutes.

This is what it looks like going into the oven.
and this is the final product....
yep.....HAPPY Birthday!
