Whole Wheat Double Chocolate Chip Waffles
recipe from How Sweet It Is
If you do not follow Jessica at How Sweet It Is, you should. She has some awesome recipes. When I saw double chocolate chip, you know I had to try it out. Her pictures look way better than mine, but you get the idea. Chocolate. For breakfast. (or whenever) and they are made with whole wheat, so that makes them totally healthy right?!
I made these last weekend for
2 cups whole wheat pastry flour *this cannot be found anywhere in my town. i've looked. everywhere. so I subbed 1 cup whole wheat flour and 1 cup cake flour. checkout out this link for all kinds of substitutions.
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons sugar *I used NuNaturals baking blend
1/4 cup cocoa powder
1 cup skim milk
1 egg *I used an egg substitution for Mr. Two (1 T. vinegar, 1 T. milk, 1 t. baking powder)
2 tablespoons canola oil
1/2 cup chocolate chips *I used mini chocolate chips
Preheat waffle maker. Combine all dry ingredients together, then add egg, milk and oil. If batter is too dry, add milk 1 tablespoon at a time, until it is wet but thick. I had to add additional milk b/c my batter was super thick, but I didn't use an egg. Fold in chocolate chips. Spoon 1/3 cup batter into waffle maker, cooking for 2-3 minutes or until waffle is set.
These waffles are really good. They are not real sweet, but each bite had mini chocolate chips in them and we know chocolate chips makes everything MO'BETTA!! I ate the leftovers for dinner, cold. straight from the fridge. yes, I have a problem.
