egg free, milk free pancakes!

So, after yesterday's PINT post, and your comments, I don't feel so bad abt being in the dark abt "text speak".  ty for that.  (Thank you, for those of you that are still looking at it thinking WTH is "ty") - b/c that's exactly what I did the other day when I received it in a text, hence the inspiration for yesterday's post.  The person wrote blah, blah, blah 'ty samantha'.  Apparently punctuation is not needed when texting either.  And they didn't actually write blah, blah, blah - I just didn't think you really wanted to know what all the text said (who cares?!) and her name's not really samantha - also not the point.  Anyway....whatev

On Monday's post I mentioned that I had to make a grocery store run b/c we were out of bread and milk, b/c I was a slack ass not feeling well Sunday and didn't make it to the store.  Mr. Terrible Two will basically only eat cereal-which requires milk, or cinnamon toast-which requires bread, for breakfast.  In other words...I was screwed as far as breakfast options for the wee man.  The girls had frozen pancakes, and they were good with that, since i don't buy them often it was like a treat.  Yeah, they'll grow out of that way of thinking soon.  Anyway, Mr. Two can't have pre-fab pancakes b/c of his egg allergy, so I thought 'I'll make pancakes!'.....durrr!  That usually requires I went on a recipe hunt and decided to experiment.  This was the result -
That's right baby...fluffy, egg-free, milk-free pancakes!!!

These are probably the fluffiest pancakes I have ever made without eggs.  I was pretty excited.  And Mr. Two ate 6 of them!  Granted they were kinda small, but he loved them - score one for mommy!  And b/c I'm so freakin' nice, I wanted to share them with you!  I'm not the only one who runs out of milk am I?  I hope not.  Just b/c I have THREE kids and decided to stay in bed and watch a Grey's Anatomy Marathon while the kids were with the in-laws doesn't make me a total slacker mom does it?  Of course it does.  Moving on.

My milk and egg free version -

3/4 cup apple juice

1 cup all-purpose flour

1 & 1/2 tablespoons white sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 T. vinegar and 1 t. baking powder (substitute for egg)

1/2 t. cinnamon

1.  Mix apple juice and egg substitute in small bowl.
2.  Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
3.  Add wet ingredients to dry.  Let sit for a few minutes.
4.  Heat a large skillet over medium heat, and coat with cooking spray I used a little Smart Balance Light butter. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

*Original recipe says it yields 4 pancakes.  I made mine abt 3 inches in diameter (I'm guessing) and made 8.  (Good thing I'm not texting.  You'll only understand that if you read yesterday's post!)

I love when my cooking experiments actually yield something edible :)  I think I'll try some different combinations soon - like orange juice with orange zest or lemon juice with blueberries...or chocolate milk with pretzel M&M's!!!  Ok, maybe not the last one...but who knows ;)


  1. My sister currently cant eat eggs or dairy because she is breast feeding and my niece is allegic. :( Anywho, I put your blog on her favorites since you post so many alternative recipes! Keep it up! I don't want her to starve! Hahaha!
