Granola!

I finally got around to making this granola that The Candid RD posted not too long ago.  I knew when I saw the words "molasses" I would be making this.  I LUV molasses.  We go waaay back.  My grandma used to sit me down with a plate of homemade biscuits and some good ol' blackstrap molasses.  Hmmm....explains why I gained 10 lbs every summer when I stayed with Grandma.  My mom was never happy when I returned looking like the Pillsbury Dough-girl.  It's not a good look for me now either.  Anyway... this granola is not your traditional granola.  and I think I can safely say...it's MO'Betta :)  Problem is....portion control!!!  B/c I really want to just stick my face in it and eat till I barf.  I know, right?! I have a problem.  Is there a 12 step program for that? 

Another awesome thing about this granola is that it is super quick and easy to make...no watching and stirring, etc.  The original recipe can be found here.

I had a little help...

Ingredients - (I halved the recipe): 2 cups old fashioned oats (I used my crunchy Thick & Rough Oats), 1 cup Cheerios (always have those on hand!), 1 cup chopped walnuts (can also see almonds or peanuts)

In separate bowl mix - 1 cup nut butter (I used almond butter b/c I'm allergic to peanuts BUT I only had 1/2 cup of plain so I also used 1/2 cup Dark Chocolate Almond Butter!!!); 1/4 + 1 T. molasses; and 3/4 t. vanilla

Melt your nut butter and molasses (abt 30 seconds) - doesn't this look delicious?!  It was as good as it looks, yes, I stuck my finger in it.  and licked the bowl.

Mix your melted concoction with your oats combo and whaaaa-la!  Place in fridge or freezer - I placed mine in the fridge overnight.  This morning it is nice and crunchy!  I was surprised, I expected it to stay gooey I think.  But it's really good.  It's also super sweet with the Dark Chocolate Almond Butter and molasses....so I guess that's not the best idea.  Not that I mind sweet!  The problem is I wanted to make the granola to go with my homemade yogurt.  But most of the yogurt is gone....so now I want to make more yogurt.  And of course, by the time I make it, all the granola will be gone.  Such a vicious cycle ;)

Not much else going on, just a busy week with the kids and different appointments.  Yesterday, Number One had an appointment -----

I think she was a little tired.  Proof that kids can sleep anywhere, anytime and in any position if they are tired enough!!
