Zucchini Cookies with Chocolate Chips and Dried Fruit

ha HA....you give me a vegetable and I'll add chocolate and turn it into dessert :D  I'm sure no one is surprised by this.  This week's Share a Spoon theme is squash!  Head over to Think Tank Momma and link up - and check out all the recipes going on...pumpkin, butternut squash, zucchini - there are so many possibilities!!! 

I saw this recipe a couple of weeks ago at Two Peas and Their Pod and since I had some zucchini in the freezer, I wanted to give it a try.
 Zucchini Cookies with Chocolate Chips and Dried Cranberries
slightly adapted from Two Peas and Their Pod

1 ¼ cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3/4 teaspoon cinnamon

4 tablespoons Smart Balance Light 50/50 blend, softened

1/2 cup light brown sugar

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 T. milled flax seed with 3 T. water (or 1 large egg)

1 cup shredded zucchini

2 cups old fashioned oats

1 cup semisweet  DARK chocolate chips

3/4 cup dried mixed berries (cranberries, cherries, blueberries)

Directions:

Preheat the oven to 350 degrees.

Line a baking sheet with parchment paper/silicone baking mat or spray with cooking spray.

In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. 

In a large mixing bowl, cream butter and sugars. Add egg or egg substitution and vanilla extract.

Add shredded zucchini (to large bowl). Mix until combined.

Slowly add flour mixture to zucchini mixture and mix until just combined.

Stir in oats, chocolate chips, and dried fruit.

Drop cookie dough by heaping tablespoonfuls 2 inches apart onto prepared baking sheets.

Bake for 15 minutes or until golden.

Remove cookies from pans; cool completely on wire racks.
You need to flatten them a little, they don't spread out...

What can I say?  'Da bomb baby, that's what!  These are so good!!  And they are good for you too ;)  Is there a better way to get your vegetables?  I think not!  Seriously, these are delish...and I have something else baking that smells wonderful...but I'll save that for another day.

Yep, I've been cookin' away today....Mr. Two has the croup and it's been raining, so I knew cookies would make me us feel a little better.  Can't wait to see what the girls say when the see the flecks of green in them.  Speaking of green -
Mr. Two has been getting his greens another way.  Some how, I don't think that counts.

  1. I'm going to make these, for sure. I am with you on the dark chocolate. I LOVE IT. My kids and hubby, not so much. That's ok, these cookies can be for ME! :D

    I love zucchini. Love love love it. And honestly, I prefer to bake with it. Zucchini bread is so good!

  5. Seeing that bowl of chocolate chips makes me really want chocolate chip cookies. And the zucchini addition is pure genius! Way to sneak some veggies into dessert!

  6. Those look really good! And, what a sneaky way to get my picky kiddos to eat veggies (if given a choice, they'd pick the green crayon)!!! Definitely will be trying these!
