Resolutions? What resolutions?

You're not really suprised are you?  Sometimes, life just requires cookies.  With chocolate.  And peanut butter.  Or for those of us who can't have peanut butter, some other nut butter/replacement.  And let's throw in some oatmeal to make them healthy :D

Inspired by Peanut Butter, Oatmeal and Chocolate Chip Cookies by For the Love of Cooking
*my changes are in italics

1/2 cup butter, melted  *1/4 cup softened Smart Balance 50/50 & 1/4 cup applesauce

1/3 cup granulated sugar

1/2 cup peanut butter (smooth or chunky)  *1/2 cup Soybutter Peanut Butter Replacement

1/3 cup firmly packed light brown sugar

1 egg  *1 T. Milled Flax Seed mixed with 3 T. warm water

1/2 teaspoon vanilla

1 cup all-purpose flour

1/2 teaspoon baking soda

1 cup old-fashioned oatmeal, uncooked

3/4 cup chocolate chips (optional)  *1/2 cup semi-sweet chocolate chips

Directions -
Preheat oven to 375 degrees.

Using an electric mixer, combine butter, applesauce and granulated sugar in a large mixing bowl until fluffy. Add *peanut soybutter and brown sugar, beating well until thoroughly combined. Scrape sides of bowl with spatula. Add *egg replacement and vanilla then mix until smooth. In a small bowl stir together flour and baking soda, then add to cookie dough and mix just until blended. Using a mixing spoon, stir in oatmeal and chocolate chips.

Scoop balls of cookie dough and place 2 inches apart on ungreased cookie sheets. (I baked mine on silicone mats.) If you reduce the butter content, you will need to flatten them out a little as they will not spread.

Bake for 8 to 10 minutes, or until cookies are lightly browned. Mine took 7 to 8 minutes.  Remove from oven and let cool 5 minutes before removing from cookie sheets.
You have to admit...even being egg free, reduced fat, soy butter cookies....they look good :)

I never really know what's going to happen to a recipe when I make multiple substitutions, but this time, things worked out.  The cookies were moist and yummy!  Definitely goes in the "make again" stack.  As a bonus, my kids actually ate some oatmeal!  They don't share my love for it.  Silly kids, they have no idea what's good.  Except we did ALL agree on the cookies.  I really prefer the taste of Sunbutter (sunflower butter) over Soybutter, but the Soybutter is cheaper and much easier to find around here.  This is the one I use.  We don't usually eat it plain, but I use it in recipes often.  It has several health benefits too.  Soy protein, Omega-3, fiber, etc. AND it's made in a 100% nut free, gluten free, dairy free facility!! They have a website if anyone is interested SchoolSafeSoyButter.com.  Just a FYI.  Our school system has started using this as a replacement for peanut butter on the days they have PB & J sandwiches.  I was excited to learn this since there are SO many kids out there that are extremely allergic. 
 
Obviously, if you do not have food allergies to worry about, you can follow the original recipe!  Everything I've made from that site as been sooo good!
