Baked Mozzarella Sticks

My kids love mozzarella sticks.  You know the ones, deep fried pieces of cheese that are frequently on the appetizer menu.  However, I don't make them at home b/c I pretty much never fry food and I don't buy them b/c they are so unhealthy.  Sooo...my kids are pretty much out of luck. Well, they were. Until now!
I've tried different methods of preparation, trying to find a suitable replacement for the kiddoes.  We've wrapped crescent rolls around string cheese (my kids love some crescent rolls) and baked them.  The kids liked those, but they're still high in fat. So, the other night I was looking around the fridge and saw some leftover egg roll wrappers.  And string cheese. And the baked cheese stick was born!

Olive Oil Spray (or other cooking spray)
  • Take an egg roll wrapper and wrap it around one cheese stick. I sort of wrap mine the way I would if I were making egg rolls. To keep the egg roll from unraveling, seal by wetting it just a little with water.
  • Place wrapped cheese sticks on a baking pan sprayed with non-stick cooking spray, and spray the tops with a little olive oil (I use my Misto for this). 
  • Bake at 375 degrees until they start to brown, then turn and bake the other side until lightly browned. The cheese should be melty and oozy.  Oozy's a word right?  Maybe. (But don't let it ooze out too much!) Approx. 10 minutes per side. 

Verdict? My girls loved these! (Mr. Two couldn't have them b/c of the eggroll wrapper).  They were tasty, and a great alternative to fried.  (Eggroll wrappers are very low in fat, and you could use light string cheese as well).  These could also be fried, and would probably be delicious, but that would have defeated the 'healthier alternative' purpose!

Hope everyone has a great weekend.  If you happen to have a cure for a NONSTOP cough, I'd love to hear it.  I've really had enough.  My poor bladder can't handle all this coughing after going through three pregnancies.  I know, TMI.

    As to the cough, best I can offer is cough drops with menthol . . . sorry.
