(semi-homemade) Trail Mix

I'm taking a break from posting zucchini recipes...I'm tired of zucchini! (Even though I do have a fabulous zucchini dish to share next week - and it's healthy to boot!)

Have y'all seen this?
Found this at the Wal-Mart.
and you know how I love my antioxidants ;)

My only complaint with this is it has A LOT of dried cranberries.  So, I decided I would spruce it up a little.
I added honey almond granola, dried blueberries, and extra dark chocolate chips.
Because mo'chocolate is mo'betta.

Honey Almond Granola slightly adapted from What Megan's Making (a Quaker Oats recipe)

3 1/2  2 1/2 cups oatmeal (quick or old fashioned, uncooked) *I used a combination of both

1 cup Multigrain Cheerios

1/2 cup slivered almonds *I omitted since they were already included in the mix.

1/2 cup honey

4 Tbsp unsalted butter, melted

1 tsp vanilla

1/2 tsp cinnamon

1/4 tsp salt

dried fruit *omitted b/c already in the mix

Pre-heat oven to 350. Spray a 15x10 jelly roll pan with nonstick spray. Combine the oats and almonds Cheerios in a large bowl and set aside. Combine the honey, butter, vanilla, cinnamon and salt in a small bowl and mix well. Add the honey mixture to the oats mixture and almonds and stir to combine. Spread the mixture evenly in the prepared pan. Bake 30-35 minutes or until golden brown, stirring every 10 minutes. Be careful as it burns quickly near the end. Stir in the dried fruit. Cool completely and then add to the Chocolate Nut Antioxidant mix, with additional chocolate chips & dried blueberries if desired. Store in an airtight container.

Verdict?   YUM!!  I've made this twice already and we love it.  Unfortunately I used a different granola recipe the second time, and it wasn't as good.  I will keep experiementing until I feel like I have the 'perfect' granola!  This is awesome as a topping for yogurt too!

  1. We don't have that at our Wally World yet. I love sprucing up my own trail mix, too. I think I always have too much chocolate, but you're right...Mo' Chocolate is Mo' Better!

  3. I haven't seen that yet either. My kids would love to snack on your version, though I would go with a milk chocolate version for myself. :)

  4. I thought this was right up my alley. I love craisins so it's perfect for me. Man, I was so bummed. I went to WM to find this trail mix and my store didn't have it. :( Hopefully we'll get it soon.
