2 ingredient brownie bites (egg free)

How do you get your kids to eat vegetables?  Well, you hide them in chocolate of course!  I'm all for sneaking in extra nutrition whenever I can, b/c even though some of you may have kids that eat a well-balanced meal with plenty of fresh fruits and veggies....my kids don't.  They do well with fruits, but they have a very limited number of vegetables they will eat.  So, when I read somewhere that you could make brownies using just pureed pumpkin (no eggs or oil needed), I had to give it a try.  One, b/c it would give the kids some extra vitamins (pumpkin is good for you!).  Two, NO EGGS! So it would be a treat my little man could have. Three, they would be getting a treat, but it would be a little healthier.  Now, I'm not saying anything about a boxed brownie mix is healthy - but, just work with me here!
you can use any brownie mix and you need 15 oz pureed pumpkin (this is the large can, so I used half).  Mix the two ingredients together - no additions needed.  Place in whatever size pan you want, I used a mini muffin pan to make 'brownie bites'.  The perfect size for this guy...
Mr. Three is giving them a taste test...
he loves chocolate.
Can't imagine where he gets that from ;)
he crams the entire thing in his mouth...a sure sign that it gets his seal of approval.  (Which is very difficult to come by!)
one happy vampire boy.  He ate 3 before I cut him off!

Now, these are super simple.  They are egg free.  The kids loved them.  So, I will definitely use this trick again.  Me personally....I didn't like them.  They are very dense and moist with the slightest hint of pumpkin flavor.  I mean, they aren't bad, I just didn't care for them.  However, I didn't make them for me, I made them for the kiddos, who gave them a 'thumbs up'!

  2. Yep, these are a favorite at our house! I can't believe how good they are (only mine are made with a chocolate cake mix). I did a post about them (below), but I'll be updating it soon to include a great homemade chocolate cake mix recipe.

  5. I've had these before and they are okay. They are really dense and chocolatey. I like a more cake like brownie.

    1. Time depends on the size pan you are using, but you can follow the guidelines on your brownie box. I also baked them at the recommended temp, which I think was 350 F.
