What I'm Making Today (oh my)

Today is going to be super busy, getting everything ready for the big day.  I've got my stretchy pants all ready to go, along with a big baggy shirt to hide the bulge.  Yep, always thinking ahead.

Even though my mom is doing a majority of the cooking, I've decided on a few things that I'm going to attempt make.  The fact that I've waited to do it all in one day may not be so smart...

On my to do list -
Brown Sugar Pumpkin Cheesecake with Chocolate Shortbread Crust at The Hungry Mouse
Brown-Sugar Pumpkin Cheesecake with Chocolate Shortbread Crust from The Hungry Mouse

Pumpkin Dinner Rolls
Pumpkin Dinner Rolls from Tammy's Recipes
*I'm hoping I can halve this recipe and make the dough in my bread machine

HERSHEY'S Natural Unsweetened Cocoa
but make as cupcakes, with a kiss in the middle like this -

and I want to add coffee in the place of the water.
I haven't decided on the frosting yet.
These will be for my Mom's birthday!!

because I still have apples left and for whatever reason I decided to buy a HUGE bag of cranberries from Sam's Club yesterday.  Expect some cranberry recipes in the future! And feel free to pass along your faves.

and I almost forgot!  I'm going to try these
Homemade Thin Mints (Low Carb and Gluten Free) from All Day I Dream About Food
Thin Mints used to be my hubs favorite cookie pre-diabetes, so I've had this bookmarked to try for him!

Okay. I'm feelin' just a tad stressed now.

What are y'all up to?!
