Oh. Yes. It's been a while since I've posted something incredibly gooey and chocolate-y. Far too long in my opinion. So let's look at it again.
Yep, definitely drool worthy.
Can't you just imagine taking a big ol' bite?! Warm, gooey, chocolate chips that melt in your mouth....
And what if I told you it was healthy? Okay...maybe not completely healthy, but waaayyy better than the traditional sugar and butter laden cookie dessert. It has a vegetable in it for goodness sake. But trust me, eat this warm, with a little whipped cream or ice cream (or frozen yogurt) and a drizzle of dark chocolate syrup...and no one will guess it's good for you. AND it will satisfy even the strongest chocolate craving (without breaking the calorie bank).
Deep Dish Cookie Pie
from Chocolate-Covered Katie (I'm loving this girl)
2 cans white beans or garbanzos (drained and rinsed) *I used garbanzo
1 cup quick oats
1/4 cup unsweetened applesauce
3 T. canola oil *I used olive oil
2 t. pure vanilla extract
1/2 t. baking soda
2 t. baking powder
1/2 t. salt
1 1/2 cups brown sugar (*see original recipe for notes on this) *I used 1 cup brown sugar and 1/4 cup NuNaturals Stevia Baking Blend
1 cup chocolate chips *I used 3/4 cup dark chocolate chips
Directions
Blend everything but chocolate chips very well in a food processor. Stir in chocolate chips and pour into an oiled 10-inch springform pan. Cook at 350 F for abt 35 minutes. Let stand at least 10 minutes before removing from pan.
Eat as soon as you can without burning your face off. I tried this the next day too, and preferred it warmed up in the microwave. With Cool Whip and chocolate syrup :D You're welcome.
