Perfectly Chocolate Birthday Cake

CAKE!  You knew it was coming.  Resolutions my a*s.  Miss Two turned NINE!!  I can't believe it.  And bless her heart, her party was scheduled on the day I had the lovely kidney stone debacle.  Even though her party has been rescheduled for this weekend, we still had her cake (I couldn't bear to cancel her party and stick her cake in the freezer!)  So, now she gets to pick out cupcakes or something too.  Anyway - I went with the Hershey's 'Perfectly Chocolate' Chocolate cake.
She wanted a snowman cake!

Ingredients

  • 2 cups white sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup HERSHEY®'S Cocoa Powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water with a heaping teaspoon of instant coffee added



  1. Heat oven to 350 F. Grease and flour two 9-inch round baking pans.
  2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water/coffee (batter will be thin). Pour batter into prepared pans.
  3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.

There is also a 'Perfectly Chocolate' Frosting, but she wanted white icing - so I just went with the canned stuff (I had been suffering you know. I needed all the shortcuts I could get!)  The girls decorated the cake all by themselves!  My only complaint was the cake was so moist, it almost fell apart coming out of the pan, and when I put icing on it.  Otherwise, the taste is yummy and my birthday girl was very happy with it.

  5. The cake is fab! so glad you are on the mend. My neighbor had a kidney stone and told me she it was horrible. We thought her husband had a heart attack when EMS pulled up. ha!
