Italian Sausage Enchiladas

Italian meets Mexican.  Why not?!
I'm not sure how this ended up being the only picture I have...I must have been hungry that night. (of course, that's every night...so really not an excuse)

When I saw this posted at Eat at Home, I knew I wanted to give it a try.  I love Italian sausage, and enchiladas, I just never thought to mix the two.  

Italian Sausage Enchiladas adapted from Eat at Home

1/4 lb. turkey Italian sausage
1/4 lb. lean ground beef
1/4 chopped yellow onion
4 oz. Mexican Blend shredded cheese
4-5 whole wheat tortillas
5 oz enchilada sauce (I froze the other half of can)
approx 8 oz tomato sauce (I froze the other half of can)
1/4 tsp garlic powder

Directions
Brown turkey sausage, ground beef and onion in large skillet. 
Mix 2/3 of the cheese with the meat, reserving remaining cheese for the top.
Stir together enchilada sauce, tomato sauce and garlic powder.
Spread some sauce on bottom of  8x8 pan.**
Fill tortillas with meat and cheese. Roll and place in pan.
Cover with sauce. Top with cheese.
Bake 30 minutes or until hot and cheese is melted at 350 degrees.

**Notes - I made half of the original recipe.  Double ingredients and use a 9 x 13 pan for full recipe.

Verdict? - It was yummy.  Like I said, I love Italian sausage and this would have been good using all sausage too, which is what was done in the original recipe.  Even my 2 girls ate this...however, Number One just ate the filling.  My kids are soooo picky.  
I originally cooked a lb of turkey sausage and a lb of lean ground beef.  I froze the extra, and ended up using it in soup.  The remaining tomato sauce was actually used in yesterday's Chicken Tortilla Soup.  I have found the freezing individual ingredients sometimes works out better than making a full amount of a recipe and freezing half of the finished product...unless it is something that you know your family will like and eat. (and will freeze well) Since I am frequently trying new recipes, I never know if it's going to go over well or not!

  1. My kids are very picky, too. They didn't used to be, but when one kid is told to eat anything and everything he wants, you can't tell the others to eat their broccoli! We're trying to work our way back to better habits. I do think they'd all like this recipe though.

  4. I love the italian sausage/ground beef combo. I use that all the time when I make chili and I think it makes it taste extra delicious. I'll definitely have to give this a try!

  6. I, too, love sausage and enchiladas. I shall try this. It looks amazing. I doubt my picky 18 month old will find it enjoyable, but I can still try. I know that my husband will think that it's awesome. He, too, loves sausage and enchiladas.
