Cinco de Mayo - food ideas

Any day centered around Tequila, lime, and Mexican fare is a good day.  I have a few fun ideas from previous posts that I thought I would share since tomorrow is Cinco de Mayo! (Where did April go?!)
This cake was awesome. It embraces all the wonderful things I love: Tequila, sugar, lime and cake! (in that order!)
I don't use a recipe for mine, I just mix up avocado, lime juice, lots of cilantro, and salt and pepper; but I linked up one from Alton Brown.  I'll have to try it with tomatoes and onions soon.
Enchiladas  (beef or chicken)

and if you find yourself without taco seasoning....
just make your own!

And no Cinco de Mayo celebration would be complete without drinks....
or
Beer Margaritas (love these!)
(or you could go Chili's for their CoronaRita!)

  3. all of this looks so delish. enchiladas are probably my favorite food. especially the ones i make at home. and tequila is so tasty. i have some for once. every shot is 4 points. grrrrrr.
