Menu Monday #2

My girls start volleyball this week, which means for an hour and a half, 2 evenings a week, I'll be tied up with practice.  Therefore, my meal plan has to include things that are super fast to get on the table.  Again, I've left the weekend open...even though I need to start planning meals for the weekend to keep us from eating take out both nights! Check out last week's menu here.

Monday...
Monterey Chicken at https://therecipecritic.com  This is a copycat recipe from Chili's and it is simply amazing!  It will become an instant favorite!Monterey Chicken from The Recipe Critic.
I have a partial pack of bacon that needs to be used and I have pre-cooked chicken breasts in the freezer, so this should come together pretty easy.  I'm thinking Crash Hot Potatoes and a salad or green beans as sides.

Tuesday...
absolute BEST crockpot beef stroganoff recipe. Crockpot Beef Stroganoff from The Crockstar.
The crock pot will do the major cooking! I'm not sure about sides yet..maybe mashed cauliflower or brown rice (and green beans!)

Wednesday...
Applebee's Oriental Chicken Salad Applebee's Oriental Chicken Salad from Mandy's Recipe Box.
This looks like it will come together really fast and the kids can just have a plain salad and chicken tenders (their favorite meal!).

Thursday...
Lightened up lasagna soup. Sounds tasty. Bobby's Lighter Lasagna Soup from Paula Deen & sandwiches
I've heard great things about lasagna soup, so I'm looking forward to trying it.

Friday...

I like to have breakfast for dinner, and we like to have pizza on Fridays, so I combined the two. This has also gotten some good reviews. Hard to go wrong with cheese and bacon, which I just realized is part of Monday's dinner too..oops.

Dessert -

I actually made this last evening and stuck it in the fridge to firm up. I think it's going to be delish! I'm going to get my family to eat tofu one way or another!
