homemade twix bars - mo'betta style

Just look at these bad boys....they are off the hook! (whatever that means, is it a fishing metaphor? anyways...) These bars are really good - you have the creamy sweetness of the chocolate and caramel along with the slightly salty crunch from the crackers.  AND they are very easy to make!! 

So, the recipe already.

Place a layer of Club crackers in the bottom of a 13x9 pan, sides touching.  I used the Reduced Fat Club crackers.

In a saucepan on the stove, combine…

1 c. Graham Crackers, crushed
3/4 c. Brown Sugar
1/3 c. White Sugar
1/3 c. Milk
1/2 c. Margarine (I used Smart Balance 50/50 blend)

Bring to a boil, continue to stir and boil for approximately 5 minutes. The mixture will be caramel like and pull away from the sides of the pan.

Pour over the crackers, being very careful, the mixture is extremely hot.

Immediately top with another layer of Club Crackers, pressing down slightly.

Place in fridge to chill for at least 30 minutes

For frosting, in small bowl, combine -

2/3 c. Peanut Butter  **This is where I changed it a bit - I used 1/3 cup Soynut butter and 1/3 cup butterscotch chips.  The soy butter b/c of the little man's peanut allergy and the butterscotch b/c I didn't have enough soynut butter!  Yep, I'm so organized. <-- em="" sarcasm="">

1 c. Milk Chocolate Chips

Microwave for 2 minutes, stir well and frost crackers. Place in fridge until frosting is firm. Cut into bars.

or eat huge chunks directly from the pan.  I won't tell.

It doesn't do me any good to try to make things ahead of time, to have for the holidays, b/c I eat them all.  I see a major diet coming on in January :P  Moderation sucks.

  4. I've seen the ones that are similar but are Heath bars. I like this better, because I like Twix better! :)
