Pineapple Margaritas

My favorite adult beverage is a margarita. A good ol' salted rim, top-shelf margarita, on the rocks...YES! I've seen lots of different versions of this classic drink on Pinterest that have me drooling intrigued. When my siblings and I got together on Father's Day, we decided it was time to test out one of these recipes. Because my siblings are lushes like margaritas too :-)

Pineapple Margarita
adapted from Gimme Some Oven

3 cups frozen pineapple chunks
1 cup lime juice
1 cup tequila
1/2 cup orange liqueur
1/4 cup simple syrup* (can also use honey)
  • Place pineapple in a blender and blend until smooth. (You can add in some pineapple juice if needed to get things blending well)
  • Add remaining ingredients and pulse to combine. 
  • Drink up!
*We omitted the simple syrup, since pineapple has a lot of natural sugar. The drink was strong and the lime juice was a little overpowering. I would recommend using the simple syrup, honey or agave OR reducing the amount of lime juice. I added a little of my Southern Iced Fruit Tea to sweeten it up a little, and I thought it was delicious. As a matter of fact, I think I drank most of it. oopsies.
