Mo' Basil


I have massive amounts of basil in my garden, and I have been wanting to make pesto for a while.  I really like it, but the store-bought varieties have too much garlic for my taste.  Since my sister was coming for a visit (and her birthday was Monday), I decided to make us a spinach pizza with homemade pesto and feta for lunch.  This is one of my favorite pizzas, but I've never attempted to make pesto before.  However, I looked up How to Easily Make Pesto from Fresh Basil! and it seemed simple enough! 

I picked my fresh basil (I still get a thrill out of running outside to pick stuff to EAT!!) and followed the simple steps.  The above pic is actually after I picked most of the leaves off to go into the recipe...I forgot to get one before (typical).  I was very nervous with my very green paste, but slapped it on a pre-made crust (no time for home made crust today) and added the spinach and (too much) feta.


I baked it according to the directions on the crust....


and ended up with this delicious pizza!!!  It was so good (except for a little too much feta) and I can't wait to use pesto in another dish.  It was so much better than store-bought!! (pats on the back here)  And it's EASY, which is always a bonus.  Just another reason to love my (sister's) food processor.  Sure hope she doesn't want it back anytime soon ;)  For dessert, I thought we'd try Breyers Smooth & Dreamy Coffee Fudge Brownie Ice Cream....hApPy bIrThDaY!!

I see a coffee dessert drink in my future with this.....

AND some progress made with Mr. Terrible Two....
this is my little man....EATING a VEGETABLE!!!!  YAY!!  and yes, those are fish sticks on his plate.  What can I say - sometimes you have to go Gorton's.  Don't judge ;)

  1. That looks deeeeee-licious! I love me some basil though.

    Speaking of basil, I have a big pot of it on my kitchen counter, but it's slowly dying. Like, the stalks are turning brown. I don't totally neglect it, so I'm not sure what's happening - if you have any sage advice (I mean "basil" advice, hehe) do let me know!
