weekend recap

Friday night, made this for the hubby - he was craving something sweet and this is diabetic friendly....


It's so easy I'm almost embarrassed to say what's in it...

yep, that's it, + 2 cups skim milk.  Mix milk with pudding then add in cool whip.  We stick it in the freezer until firm.  Easy low sugar, low fat chocolate fix.

Saturday, went to visit my parents....

it's highly addictive.  i will not be buying anymore. (lie)

I also bought this....

Why?  I have no idea.  It's not like I'm going to be sticking some leaves in my coffee.  The leaves are quite tasty however.  yes, I ate one.  and made my sister eat one too.  You can chop them up and add them to fruit salads and such.  It's like eating candy.  I may just munch on some leaves when I run out of the MaraNatha.  and maybe not.

On Sunday, I was super bad and made this....

This is my Chocolate Chip Zucchini Bread, which I made into french toast.  Can you say daaay-um!?  It was off the chain baby.  And it wasn't too unhealthy...I had vegetables for breakfast. (okay - AND chocolate chips).  But I made up for it by deciding to run my first 5K.  (in September.)  I hope.  As in I hope I don't chicken out and I hope I actually train like I'm supposed to.  This should be interesting to keep up with.  Maybe.  Right now, I'd do well to run a mile, so we shall see.  But just by making this decision I negated all the calories from the above items.

  1. i need to "stop by" around times of food consumption. that french toast bread looks delicious.

    my bruschetta was also crazy good. the feta/sour cream/roasted garlic spread made it super freakin good. instead of a slice of tomato, i cut up tomatoes and added olive oil/balsamic vinegar/basil. plus the toasted baguette plus the cheese plus wine = fabulous.

  2. Just read your comment about the almond butter. There are subtle differences between almond butter and peanut butter, but overall I would say almond butter is probably a little better for you. It's usually made with less sodium, contains more magnesium and vitamin E. Although I have to say Smart Balance peanut butter is AWESOME!
