all growed up

I've reached a turning point in my life.  No longer do I have the palate of a 7 year old.  I can honestly say I've matured.  I can tell my mother that I am actually, finally, eating my vegetables. (I really did send her an email, with pictures...it's that big a deal).
It started with this. 
Today's pickins'. 
What to do with these pretty veggies....

Then the kids decided their cousin should spend the night, an extra child to feed.  And they weren't to keen on the idea of having vegetables for dinner.  Honestly, I wasn't either.
So, I did what so many moms do when their kids have friends over.  I made pizza!  Cheese and mini turkey pepperoni for them...but what about me...and the hubs...and all these colorful veggies.
 
cut 'em up (green pepper, red banana pepper, grape tomatoes, onion, broccoli - use whatever you have and want, that's the great thing about pizza!), toss with olive oil, sea salt, pepper and rosemary
 then roast them! 425 degrees for about 15 minutes with a clove of garlic (unpeeled)
Peel the garlic, mix with roasted veggies, place on homemade pizza crust, with feta and fresh basil (also from garden!).  and a little pizza sauce....I couldn't totally leave my comfort zone.
Bake 7 more minutes (after pre-baking crust for 7 minutes)
Take a tentative bite....and be utterly amazed at how good this pizza is!!! 
LOOK MA, I'm eating my vegetables!
and maybe one day, the kiddies will give it a try too.
