nacho granola yo

I feel super productive with all I've accomplished in the past 24 hours.  Of course, it's all food related.  Why can't I get addicted to kick boxing, cross country skiing, fasting?  Anyway...I made more homemade yogurt!!  See my post here if you missed it before and would like to know how very easy it is to make.  This time I used skim milk and strained it in coffee filters to make Greek style yogurt.  It's thick and creamy and awesome looking! I also made more granola, b/c the last was consumed at warp speed.  I changed that up a bit as well.  The original post can be found here.  This time I used the "Morning Mix" I bought from The Fresh Market that has oats, sunflower seeds, raisins, dried cinnamon apples, and I'm not even sure what else.  I also used Chunky Almond Butter (no chocolate this time) and glazed walnuts (b/c I have a giant bag of them from Sam's Club). 
This concoction created a FABulous granola. 
I'll be having some over my yogurt very soon!  In case you haven't noticed, yogurt is my new obsession.  I'm not sure why, I've never really loved yogurt, but now I want it all the time.  Maybe my body needs more protein, or bacteria (ewww?). 

Anyway, I needed something fast and easy for dinner and decided on nachos. 
I haven't had them in a really long time, so thought I'd make a healthier version.  I used ground turkey instead of beef, with a package of taco seasoning and some fat free refried beans.  This is the only way to get anyone in my house (including me!) to eat beans.  Used some plain yogurt instead of sour cream, had green onions, lettuce, salsa and CHEESE.  Have to have cheese - I used a mexican blend (without added seasoning).  I kept it basic b/c the hubs is not a big fan of peppers or anything too spicy.  The best part to me however, were the homemade tortilla chips. 
They are super simple, and good.  I don't know why I don't make them more often.  All you do is cut up your tortillas - I used low carb/low fat tortillas
and slice them with a pizza cutter, spray them on both sides with olive oil spray and bake them for about 4 minutes on each side at 400 degrees.  As soon as they come out of the oven I add salt and sometimes cumin.  They were yummy.  AND Mr. Terrible Two had two bowls of MEAT/beans with plain yogurt and cheese.  YAY!!  My child finally got some protein!!  I have been concerned at the lack of protein in his diet (well, I've been worried about his diet all together).  He apparently likes spicy stuff...guess I'll be making mexican more often.  Sorry hubs.  (it's probably his least fav). 
Also, just in case anyone has been wondering....Michelob Ultra has a Dragon Fruit Peach flavor that is, shall I say it....THE BOMB.COM! 

Of course, all this eating and cooking goodness occurred BEFORE all the drama that is my parents' life happened.  I needed several more beers (or something stronger) by the time I finally went to bed - which was 1? 2?  I can't remember.  Let's just go with the abbreviated story and say that my parents house now has no carpet downstairs, a dehumidifier running and all the rugs are outside drying out.  This was accomplished about 9pm last night or later? by my brother and dear husband (who drove an hour and a half to help - thanks honey).  Oh, and the water is turned off - so the crappy ass refrigerator can not spew more water all over their house while they are out-of-town.  (If you've read other posts, you may remember that my dad is recovering from a bone marrow transplant). 
AND the dog, the love of my dad's life, threw up the rat poison. 
So hopefully life can resume to it's normal level of extreme stressfulness.  Yeah. 

Now, I need to go do something that is totally NON-FOOD related!  Like train for my 5K that's in a few weeks -maybe that will help with the stress level.  Better take some ibuprofen first, it's killing my knee and hip joints.  I'm too old for this #@%&.
