Kid Cook

"I wanna be a COWboy baaaaybeee"....oh....that's Kid Rock.  Sorry, I'm easily distracted.  This is Kid Cook.
She has been annoying the crap out of me asking to make this No Bake Oreo Cheesecake from her very own cookbook. (Sandra Lee's Semi-Homemade Cool Kids' Cooking

This is her sous chef.  Seriously hoping she will drop something.  (and who is NOT supposed to be in the kitchen!)
The cookbook is kid-friendly and she was able to do all of it herself.

finished product and proud little girl!  I love the off-center "design" on top!  Of course, it was very good - b/c (1.) my child made it and (2.) it has freakin' Oreos in it!

In case you have a Kid Cook - here's the recipe:

*Oreos or other Chocolate sandwich cookies with white filling (enough to make 1&1/2 cups when broken into small pieces) We used a "grab bag" of mini-Oreos.
*1 (8 oz) cream cheese (we used 1/3 reduced fat)
*1/2 cup sugar
*1 cup sour cream (we used fat-free)
*1 t. vanilla
*1 container (8 oz) frozen whipped topping (we used fat-free)
*1 9-inch chocolate pie-crust

Directions:
*Place cookies in plastic bag and crush cookies into small pieces with rolling pin.  Measure out 1 1/2 cups and set aside.
*Place cream cheese in microwave safe bowl and nuke for 1 minute on medium-high (80%) until softened. 
*In large mixing bowl, mix softened cream cheese and sugar on low speed until creamy.  Add sour cream and vanilla, beat until well combined.  Using rubber spatula, stir in whipped topping and crushed cookies.
*Spread mixture evenly into piecrust. 
*Chill in refrigerator for 4-5 hours before serving.  Ours got a little firm, but not hard at all.  I imagine if you use full fat ingredients, it will be firm.  I'd rather have softer pie than a softer behind.

Cooking is a good activity for kids (boys and girls) because it makes them read, follow directions, measure, learn about fractions, etc.  It also boosts their confidence to try something new, and it turn out well.  I like to use it to teach about "better" choices too - like reducing fat when possible, which involves reading the labels, using healthier substitutions (like applesauce for oil) and so forth.  My Number One thinks she can cook anything now!  If you're wondering where Number Two was during all this, she was probably taking a nap or watching TV.  She has the energy level of a slug.  I've got to work on that one.  Maybe we'll go for a walk or bike ride *sigh*.   I better see how hot it is first.  My energy level is not much better. (I'm 30 years older, I have an excuse.  and my iron is low.  that's my story and I'm sticking to it :P)
