Today I wanted to share a recipe I found last week. Since I made homemade apple butter, I wanted something yummy to put it on. Biscuits immediately came to mind, but they are so fattening that I very rarely make or eat them. (Except for the occasional chocolate chip biscuit!) I searched for a low fat biscuit and found this recipe. I tweeked it just a little....
•2 cups flour *I used half whole wheat flour
•2 tsp baking powder
•1/4 tsp baking soda
•1/4 tsp salt
•2/3 cup buttermilk, 1% fat *I used skim milk with a little vinegar
•3 Tbsp + 1 tsp vegetable oil *I used canola
Directions:
1.Preheat oven to 450 F. In a medium bowl, combine flour, baking powder, baking soda, and salt.
2.In a small bowl, stir together buttermilk and oil.
3.Pour over flour mixture; stir until well mixed.
4.On a lightly floured surface, knead dough gently for 10 to 12 strokes.
5.Roll or pat dough to 3/4-inch thickness.
6.Cut with a 2-inch biscuit or cookie cutter, dipping cutter in flour between cuts. *I just did drop biscuits, b/c I hate to roll out anything!
7.Transfer biscuits to an ungreased baking sheet.
8.Bake for 12 minutes or until golden brown.
Yield: 15 servings--Serving Size: 1 (2-inch) biscuit - mine were bigger I think

What I liked about this recipe is that it yielded light, fluffy biscuits. Usually I end up with a hard, dense hockey puck biscuit. They were also quick and easy to throw together. Always a plus!
They are great with apple butter or my MIL's homemade strawberry jam!
Now I need to see what I can scrape up for Mr. Terrible Two for breakfast, since there is no bread and no milk in the house! Mental note - GO to the freakin' grocery store. AGAIN.
we have no bread or milk either. and we are just 2 adults. somehow i still have to go to the grocery store ALL THE TIME.
