Fruit Salad....yummy, yummy

That title will mean nothing to you unless you had a child that was obsessed with The Wiggles back in their hayday and forced you to watch them over and over and over again!  I will have that song stuck in my head for the rest of the day!  Maybe I can find a link for your listening pleasure...

hahaha, now you can sing it all day!

Anyway...i digress.  Today I'm kickin' it old school.  My Grandma used to make a fruit salad similar to this when I was growing up, and I always thought "ewwww, I'm not eatin' that".  However, when I saw this posted at Mother of Pearl It Is the other day...it sounded pretty good.  Guess I'm growing up a little!  I changed it up just a bit, b/c we are not huge fans of fruit cocktail, and it was.....dare I say it....yummy, yummy!  The girls loved it.

Ingredients
* 2 large cans 1 (15 oz) can of fruit cocktail

* 2 cans of chunk pineapple

* 3 small cans 1 large can of mandarin oranges

* 1 small jar of maraschino cherries

* 1-1/2 cups of mini marshmallows **I let the girls add these to theirs, b/c I don't like marshmallows.  Unless they are roasted and covered in chocolate, of course.

* 1 tub of Fat Free Cool Whip *I used abt 1/2 to 3/4ths of a container

* 1 8oz bar of cream cheese (softened) * I used abt 1/2 a pack of 1/3 reduced fat

* light brown or white sugar to taste *I only used a little brown sugar, it was already pretty sweet

Directions

1. Drain the juice from all the fruits and add them to a large mixing bowl.

2. In a separate bowl, cream the whipped cream and softened cream cheese together adding a little sugar at a time. Taste test for preferred sweetness.

3. Fold fruit mixture into the whipped cream cheese and add mini marshmallows.

4. Chill for at least one hour to blend flavors.
We also added walnuts to ours, but I didn't mix them in since Mr. Two is allergic.  Of course, he wouldn't even try it anyway!  This was something different, and satisfied a sweet tooth without being so unhealthy for you.  Whenever I can get some extra fruit in, it's a good thing.

Oh! And don't throw out the juice you drained from your fruit...I have a recipe to post for that next week :D

  1. OMG! My now 11 year old son had a couple of Wiggles videos back when they first came out here and I knew every single word of every single song they sang.
    Now that dang song is going to be stuck in my head for the rest of the day! Thanks. ;)

  3. Noooo way did you do that to me! My daughter loved the Wiggles when she was little. We had so many CDs. I guess I am going to have to get them out for the boys. I don't know if I can stand it a second time around.
