Let's do lunch...

Today's theme over at Think Tank Momma for Share a Spoon is SSS - soup, salad, and sammies!  I love a good sandwich and almost always order one whenever we go out (which is not often with 3 kids).  But I also frequently make them at home.  Well, I make sandwiches pretty much everyday for the kids' lunches...but that's not the kind of sandwich I'm talkin' about.  I like to make big, delicious, mack-daddy sandwiches.  I've posted a few before, but here's another....
The great thing about a sandwich is that you can change it up so that it never gets boring.  Whatever filling you like, whatever bread you have on hand, it's all good.
This bad boy was made with (store-bought) Fococcia bread. (I've bookmarked a recipe to make my own, but haven't attempted it yet.)  It's probably my favorite bread, but you can use any you like.

I slice the loaf in half (horizontally) and drizzle olive oil on the inside, then some balsamic vinegar, then sprinkle a little garlic powder and oregano.  Then add whatever meat and cheese you want...I used turkey and turkey pepperoni and Kraft fat free shredded cheddar (it's the best fat free cheese I've found.  Cabot also makes a good 75% reduced fat cheese).  Then I either wrap it in tin foil and bake in the oven about 25 minutes (at 375 degrees) until it's good and warm and the bread is crispy (this works well with artisan breads, french bread, etc) or if I'm in a rush, just throw it in the oven as is...I put mine on my new pizza stone (Thanks Mom!).  After it's warm, crisp on the outside and melty on the inside, I remove it from the oven and add my lettuce, my homemade pickled banana peppers, green pepper, and sometimes onion, and maybe even tomato if I have it.  (this is me being brave. I only started eating tomatoes this year)  I also added some extra balsamic vinagrette.  AND done.  Eat.  Delicious.

For the kids, I leave off the vinegar, use whatever meat and cheese they want (they had ham and Sargento's reduced fat provolone on their half) with lettuce.  That's it.  Sometimes one will get brave and have pickles on their sandwich.  However, it's an easy meal to accomodate the weird different taste buds in the family...you can use a large loaf, and make half one way and half another.  Leftovers are good too!

And for soup, I wanted to share one I tried this week...
Yep, canned soup.  It has been one of those weeks.  However, I was pleasantly surprised with the flavor of this soup.  I was expecting ...well, I don't know what I was expecting, but this is pretty good.  As you can see, it has a lot of broth...which is why it's only 1 WW point per serving.  Go ahead and prepare to eat the whole can, which is 2 servings.  However, at 80 calories per serving, it's okay!  I liked this soup, so I think I'll brave some other light varieties too.  I'm not usually one who goes much beyond chicken and rice soup.  Gotta grow up some time I guess ;)  Our local Harris Teeter has buy 2 cans Progresso get 3 cans free!
So let's do lunch.  A little soup and sammie.  A mocha latte afterwards.  mmmmm.  Now, back to reality.

    I've tried the Progresso WW soups. They really aren't bad for a quick soup fix.

  9. that looks delicious. tuna went fishing again this weekend so last night i just ate some cookies for supper. Progresso's Tortilla y Pollo soup is really really good. i eat it at least once a week.
