Share a Spoon - It's all about Chocolate baby!

Think Tank Momma is hosting Share a Spoon today, and the theme is very near and dear to my heart.  CHOCOLATE.  Is there anything better than a large quantity piece of rich, dark, quality chocolate?  I think not.  (ok, with the exception of peace, love, health, etc)  But really, in the food world, chocolate is King. Or Queen. whatev.

People who don't like chocolate....well...I just can't relate.  How is that possible?!  I'd be a lot skinnier if that were the case.  I'm rambling....chocolate makes me giddy that way.  The theme, let me say it again, CHOCOLATE is in honor of me Valentine's Day.  It's right around the corner folks.  If you're like me, you haven't given it much thought because of coughing, and hacking and not being able to sleep and kids being sick and back and forth to the doctor and ear infections, asthma flares, antibiotics and inhalers, inhalers, inhalers.  Oh, sorry.  That's my life.  Hopefully yours is a little, umm, healthier. But before I move on...wouldn't it be cool if they made one of those aerosol "bombs" (like a flea bomb) that you could set off in your house and it would completely disinfect everything?  Just set it off and leave the house for an hour, and come home germ free?  Awesome.  I hate to think the people I may attract to my site b/c they googled "bomb".  Ew.

Ok, moving on.  Anyone still reading?  I have a tendency to get off track.  Especially when sleep deprived.
Back to Valentine's Day, and my first love, Chocolate.  Valentine's isn't really the ooey, gooey, romantic, how-much-sex-can-we-have holiday that it once was (okay, maybe it's never been that), but once you add kids to the holiday, it's more about Valentine's cards, making sure your kids don't skip that boy they don't like who picks on them everyday b/c he has a crush on her, nasty tasting conversation hearts, etc.  Romance, schmomance.  So for Valentine's Day, I like to plan a 'special' family dinner.  Complete with candle light, sparkling grape juice in real glasses (this is a big deal at my house for some reason. My girls feel very grown up when they don't have to drink out of plastic. we're classy 'round here y'all) and usually a steak dinner, or cheese fondue.  But it could be mac'n cheese for all they care.  What's important is DESSERT.  Which will certainly be something chocolate.  But it needs to be something simple, something without eggs or nuts.  Something....yummy.  This is always a huge hit....

This is a super easy chocolate 'fondue' made with Eagle Brand milk.  If you have never had sweetened condensed milk, then, go buy some.  Make something with it immediately.  Maybe it's a Southern thang, I'm not sure.  But Eagle Brand is some good stuff, let me tell ya.  This is a quick thing to throw together, and my kids LOVE it.

Ingredients

1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk (I use the fat free)

1 cup semi-sweet chocolate chips

1 teaspoon vanilla extract

1 to 2 teaspoons warm water, as needed

Fresh fruit, small cookies or small pretzel twists, etc (for dipping)

Instructions

STIR sweetened condensed milk and chocolate chips in 1-quart microwave-safe bowl. Microwave on HIGH 2 minutes. Stir until blended. Microwave on HIGH an additional 1 minute. Stir in vanilla. If sauce becomes too thick for dipping, stir in warm water by teaspoonful until smooth.

Serve this warm with...and this is the best part....pound cake, marshmallows, chunks of banana, apples, and pretzels.  Anything you like or have on hand.  I like to put some in a small bowl, and let the kids use pretzel sticks as their 'fork' and let them dip away. 

This "recipe" can be changed up to suit your personal tastes.  It would be great with good quality dark chocolate and maybe a shot of a little somethin' somethin' if it's an adults only par-tay. It would be yummy to have strawberries for dipping too....un huh...you see where this is going.  A little whipped cream on the night stand.  yeah, whatever.
