You've probably seen these casseroles floating around for a while - Bubble Up Pizza, Bubble Up Enchiladas, etc. I decided to give it a try since it was so simple to throw together, and totally kid-friendly! With the girls involved in so many activities in the evenings, I need meals that are quick and easy to get on the table. This is one we had when the hubs wasn't home, since this is definitely not a low carb meal. (for a low carb pizza casserole, you could try this one)

Bubble Up Pizza
- 2 cans (12oz) golden layer buttermilk biscuits (Pillsbury Grands! Jr)
- 1 jar (15oz) pizza sauce *I used this easy homemade sauce
- 2 cups mozzarella cheese
- your favorite pizza toppings - cooked sausage, turkey pepperoni, peppers, mushrooms *we had mini turkey pepperoni and Canadian bacon
- cooking spray
Preheat oven to 375 degrees. Cut biscuits into quarters and place in medium bowl. Toss biscuits with pizza sauce. Add pizza topping and half of the cheese. Toss until well blended. Spray a 9x13 pan with cooking spray. Pour biscuit mixture into pan and top with remaining cheese. Bake at 375 for 25-30 minutes, or until biscuits are done.

Verdict? The kids loved this! I thought it was pretty good too, just not very calorie friendly. I think I'm going to try it with rolls (like frozen Rhodes rolls) next time and see how that goes. It would be less fat than the biscuits. I'll let ya know! I mixed everything up before basketball practice, then baked it when we got home, so I had a hot meal on the table in about 30 minutes! We had a salad to go with it. I don't like biscuits, but as soon as you mentioned rolls I thought, "YEAH BABY!" I might even go so far as to make my bread machine roll dough.

I've never seen this one, it looks great, when we order pizza in we always rush to be the one to get the slice with the biggest bubble in the crust, lol, this would be great for us!

DeleteMade this tonight and it tasted really good.. my only problem is that the center was still doughy and the top was really brown.. any idea how to get the center to cook all the way through?
ReplyDeletehmmmm, I'm not sure...you could try reducing the heat and cooking it longer. I used a 9x13 glass baking dish - not sure if the type of dish used would make a difference. Also, the brand of biscuit dough may make a difference as well. Let me know if you try it again and how it works!

ReplyDeleteSomeone else in the above comments said they had an issue with that as well. I didn't have that problem, so I'm not sure how to fix it, other than troubleshoot...the type of pan, the biscuits used, the oven, the position of the baking racks, etc could all effect baking times. I know my previous oven cooked hot, so I always had to slightly adjust the temps on things. I would also make sure that the biscuit mixture is in a pretty even layer in the 9x13 pan, and maybe rotating the pan half way through cooking may help. Sorry you had trouble.

DeleteI too, am a sauce lover, so I doubled the sauce as others suggested. BIG mistake, it was a saucy mess. Next time I'll just try stick to the recipe!
ReplyDeleteThanks for letting me know, bc I fixed this last week using the 15 oz of sauce (I usually use less) and my kids and I thought it was a little much, so I have wondered how people could want to double it! I think it probably depends on the biscuits being used, but I'm not sure. Sorry your dinner was ruined!
DeleteI'm trying this later tonight... gonna do it straight by the book. Except for this one little adjustment... I wonder if putting foil over the pan after maybe the first 20 min and cooking a little longer would help with the gooey center. You know, like you do with pies so the middle finishes cooking, but the crust doesn't burn. I'll try that and see if it helps, but i do have the Pillsbury layered biscuits, so maybe brand name is an issue. I'll let ya know.

I made this (again)recently and cooked it as written (since I was using a different oven, and others had stated they had trouble getting the center done, I wanted to see what happened). Mine cooked evenly and did not get too brown. (I'm going to post updated pics soon). I used the Pillsbury Grands Jr. biscuits, so if others are using the regular Grands, they would have to increase cook time I would think, since they are larger. In my oven, I baked it for 30 minutes. Let me know what works for you!

DeleteI'm cooking mine now smells yummy I used 17 oz sauce looks like the perfect amount made my own sauce I will let you know how it turns out
ReplyDeleteGuys and girls.. To tackle the issue of a gooey center you simply let it cook as you preheat the dish. (put dish in before you turn on the oven) which will allow the center to cook along the way to melting the top. If you put the dish in after the oven is preheated then it will only cook (or overlook) the top. Good luck, and I hope this helps!!!!

ReplyDeleteSorry, I tried to answer this this morning on my phone, and for some reason it just ate my comment for breakfast. I think most any biscuit would be fine....buttermilk, reduced fat, homestyle, etc. Hope this helps!
