Baked Chicken with Honey and Molasses

This may be my new favorite way to cook chicken.  It's good y'all. (Channeling my inner-Paula Deen)
Even my kids liked it!  And you know, my kids hate everything anything that even remotely hints at a sauce, gravy, rub or seasoning.  This however, they loved. Score. 

It is super easy b/c it's basically plain ol' baked chicken.  Get your favorite chicken parts (I prefer white, but I know a lot of folks are not with me on that), bake them in the oven with a few spices until done, then slather them with a honey/molasses glaze while they are still hot.  You end up with a sweet and spicy combo that is so good!
I know, my sides are always the same.  I'm gonna work on that this year, but it's about all my kids will eat.

Honey and Molasses Baked Chicken - inspired by HammockTracks

*Your choice of chicken pieces (I used bone-in chicken breasts, with skin)
*Your choice of seasoning (I used rosemary, fresh ground pepper, McCormick Montreal Chicken Seasoning)
*2 T. honey
*2 T. molasses

Preheat oven to 400 degrees.  Wash chicken pieces and pat dry.  Liberally sprinkle desired spices onto chicken.  Place in a roasting pan (I use one with a roasting rack inside, sprayed with cooking spray. You could also use a baking pan with sides, covered with sprayed aluminum foil for easy clean up.)  Bake chicken for 30-40 minutes or until meat thermometer reaches 170 degrees.  Time will depend on size of your chicken parts.  I had big breasts (hahahaha) so they took longer. I'm so juvenile.  While chicken is cooking, simply mix your honey and molasses together.  When chicken is done, remove from oven, and liberally coat with honey/molasses mixture.  I used a pastry brush (aka a cheap paintbrush) and covered the entire chicken breast.  I repeated this as the chicken was 'resting', until all the sauce was used.  

Verdict? We loved the sweetness of the honey and molasses, mixed with the seasoning on the chicken.  It was a delicious combo that will make a repeat appearance on our dinner table.
