How patriotic is my breakfast this morning?! I love overnight oats in the summer. I also love having a healthy breakfast already ready and waiting for me in the morning. I use steel cut oats because I love the chewy, hardy texture and the nutty flavor, and you can mix in anything you like. Today I had strawberries, blueberries, and a drizzle of honey. I also make mine with unsweetened almond-coconut milk, which gives it added flavor as well. (And I added a tablespoon of chia seeds after I took this pic.)
Red, White and Blueberry Overnight Oats
1/4 cup steel cut oats
1/2 cup milk of choice
desired toppings (fruits, nuts)
sweetener (optional, I usually use stevia or honey)
chia seeds or ground flax seed (optional)
In a small jar or container with a lid, add steel cut oats and milk. Place in refrigerator overnight. In the morning, give the oats a stir, add desired mix-ins and sweetener. Top with additional milk if desired. Enjoy!
Overnight Pumpkin Oats are also good. The options are endless!
