Zucchini Pasta

I've tried all kinds of zucchini recipes recently, but this is by far my favorite.  It's from the August 2011 issue of Whole Living Magazine.  It's on the cover, and looked pretty tempting.  When I saw the basic ingredient list, I knew I wanted to give it a try.  It's fresh and delicious and healthy.  My mom couldn't believe it when I called and told her I was shoving vegetables into my mouth as quickly as I could, and lovin' it!  Her response was "I never thought I'd hear you say that". Yep, I'm growin' up.

Zucchini Pasta (Whole Living, Aug 2011)

8 oz cherry tomatoes, sliced
1 clove garlic, thinly sliced
1/4 cup chopped raw walnuts
2 Tbsp torn fresh basil, plus leaves for garnish
2 Tbsp EVOO, plus more for drizzling (olive oil)
Sea salt
1 zucchini, thinly sliced lengthwise, slices cut into 1/4-inch-long strips
*and I added some shaved Parmesan cheese!

In a bowl, combine tomatoes, garlic, walnuts, basil, and oil.  Season with salt.  Let stand 20 minutes.  Toss with zucchini and garnish with basil.
Simple, fresh and delicious.  I experimented with how to cut my zucchini, and using the vegetable peeler got nice thin ribbons, then I did matchstick type cuts for different texture.  I also didn't have cherry tomatoes, but it's easy to make this salad your own and use what you like and have on hand.  Peppers would be a good addition, as well as lemon juice or maybe balsamic vinegar.  The only thing I would do different is use less olive oil next time - or more zucchini!

  4. That does look good - growing up I ate two vegetables: cucumbers and carrots. Turns out my mom overcooked all the veggies so that's why I didn't like them - I didn't even TRY other vegetables until my early 30's!

    Now its weird if I am out of baby spinach!

It's one in the morning, and I should be going to bed, but instead I'm looking at your delicious food and my stomach is grumbling - because, well, there's NOTHING better than pasta - it's totally one of my favorite, favorite foods!   28. I made this last night to take to some friend's house that were having us over for dinner. It was a hit!!! So very delicious. I used regular tomatoes...cause that's what I had and I added balsamic vinegar and black pepper to the mix. Awesome and so simple!
