Asian Chopped Chicken Salad - Quickie Meal Monday

Do you ever just need a quickie? A quickie MEAL of course ;-) You know those days when you forgot to take something out of the freezer, or you forgot you had to have the kids somewhere, or a meeting runs late, or you are just plain worn.out. Yep, I see you nodding your heads (not really), you all know the kind of days I'm talkin' about. Well, even on those days, you probably still want to have something decent to eat that will not blow your diet or induce guilt 'cuz you're letting your kids eat chicken nuggets. Again. (What? My kid looooves chicken nuggets!)
Well, one of my favorite quickie meals is this. Asian Chopped Chicken Salad. In the time it takes to go through a drive-thru, you could run into the grocery store and pick up what you need for this. It's not even a recipe, but it's yummy and fast, and I thought I would share. Because sometimes, you just need a quickie.

All you need is
1 rotisserie chicken (or leftover chicken)
1 bag of Asian Chopped Salad (I buy mine at Wal-Mart and Sam's Club)
sriracha (optional)

The bagged salad comes with everything you need for a delicious Asian salad - it has the cabbage, cilantro, toppings, dressing, etc. and add some rotisserie or leftover chicken to make it a meal. It's healthy, fast, and easy. And if your kids are like mine and won't eat this, give them some rotisserie chicken, plain bagged salad/carrot sticks/etc., and mac n' cheese! (Yes, this was dinner the other night!)

This salad is also good with some pineapple tidbits or mandarin oranges on top!

If you have a little more time on your hands, there is this Copycat Applebee's Oriental Chicken Salad - 
It requires a little more prep work, but not too much!

What are your favorite 'quickie' meals? I'm always looking for something fast and easy to get on the table now that extra-curricular activities are in full swing.

  1. I should probably look into those "flavored" salad mixes...I feel like they would make my dinners much easier to throw together!
