I was focused on eating cake and ice cream, so I didn't get any good pics. However, trust me, it's worth making if you like pineapple! (and I feel like you could substitute pretty much any fruit...my brother has already requested peach or strawberry for his birthday!)
Homemade Pineapple Ice Cream
1 cup heavy whipping cream
1 cup half and half (I used fat free since that's what I had)
1 cup milk (I used skim)
1 cup crushed pineapple, with juice
1 cup crushed pineapple, with juice
1/2 cup granulated sugar
3 Tablespoons lemon juice
pinch of salt
Combine all of the ingredients and pour into ice cream maker. Freeze according to instructions. Enjoy!

This ice cream was super creamy, even though it has no eggs and I used fat free creamer and milk. I will definitely be using this recipe again! And seriously, does ice cream ever really go out of season? My kids will eat it in the dead of winter. I love my ice cream maker, and now is an excellent time to purchase one!
That ice cream looks fabulous! I am defintiely into the thought of keeping tropical fruits alive throughout the winter. (Also, just FYI I think you left the pineapple out of the recipe ingredients)

DeleteOMG, I am going to have to follow your Pumpkin Board on Pinterest - I have yet to even buy my first can of pumpkin! I've never had pineapple ice cream, but it sounds amazing!
