Pumpkin Spice Eclair Cake

Eclair cake is one of my favorite desserts, but have you seen this?!
Pumpkin Spice pudding! It will turn your favorite classic no-bake Eclair Cake into a seasonal treat! Think creamy, cinnamon-y (yes, that's a word!), with a hint of pumpkin...all topped with a homemade chocolate glaze (or you can go canned, no judgement here.)

  4. Chocolate Eclair Cake is my son's favorite so when I saw the pumpkin version I knew I would have to try it. A friend brought me several boxes of the pudding mix and I use for pumpkin pie which is prefered over canned pumpkin but the eclair idea will go over much better. I am thinking a cream cheese frosting ...

    1. I'm intrigued about the pumpkin pie recipe using pudding mix! I think cream cheese frosting would be awesome - I would have done that if it hadn't required another trip to the grocery store :-)
