Got Ham? Quick & easy meals using leftover ham

I hope everyone had a nice Easter weekend and I know for many of us, the kids are on their Spring Break this week. For others, you may be getting back into the groove from the kids being out last week. Whatever you have going on, you may be facing your fridge thinking "what am I going to do with all this leftover ham?!" because how many of us cooked a ham for Easter? {Hand raised here} Well, I'm big on 're-purposing' leftovers so I have round up a few of my family's favorite recipes using leftover ham.


A favorite of my kids would be this Ham and Cheese Biscuit Pull Apart Casserole -
It is fast to put together, uses a few basic ingredients and it's very kid-friendly.

My husband really likes this Chicken Cordon Bleu Casserole, and it's a great way to use up ham AND chicken or turkey (and bread, if you wanted to make your own croutons for the top!)


My personal favorite is this Sausage, Ham and Cheese Quiche . This dish made me fall in love with quiche, and they are so versatile that you can throw in all sorts of leftovers or whatever is in the fridge. I have made this a few times, each time changing up the ingredients based on what was on hand.

Another one of my favorite things is...
Monte Cristo Sandwiches. I am really wanting one of these now, and I think it just made the menu for this week!

  4. I love all of those leftover ideas Kim! I didn't go traditional this year since it was just me, my husband and Mom - I made fresh pasta with a Sunday Italian gravy - so good!

    But now I really want a monte cristo sammie too!
