Pumpkin Spice Latte

I'm a little late on the latte train, but figured I would post it anyway.  I saw so many people posting pumpkin lattes that I had to give it a try.  Peer pressure and all.
What can I say?  Yum.

Pumpkin Spice Latte 

slightly adapted from The Motherload
  • 2 cups skim milk
  • 1 cup very strong coffee
  • 2 tablespoons vanilla *I would probably cut this back to 1 next time
  • 4 teaspoons sugar *I used 2 packets of NuNaturals Stevia
  • 1/2 teaspoon pumpkin pie spice or cinnamon
  • 2 heaping spoonfuls of pumpkin *I used 2 Tablespoons
  • Cinnamon Cool Whip for topping (optional)

Pour all of the ingredients into a pot and heat over medium-high heat until the coffee is steaming hot, whisking with a wire whisk until the ingredients are incorporated and a little frothy.  Pour into mugs and top with whipped cream and cinnamon.  (Makes 2 servings)

  1. Mmmm...this sounds so good! I love anything pumpkin. Mix it with coffee and I'm thinking "Wow"! I'll need to try this one. :0)
